The story behind the bottle
In the shadows of the hills of Gambellara, there lived a mysterious character called Eremotarso.
As each winter approached he would retreat to his hermitage made of basalt, a silent cave where time seemed to stand still.
From the depths of his abode Eremotarso lovingly observed the land: the rolling hills, the rows of vines, the fields that stretched like a green mantle.
Everything was part of his universe, and he knew every secret of the land he loved so much.
The experiences of his long life, like drops of amber, settled in his soul, and in this contemplation Eremotarso embraced his transformation.
His solitude was a journey of discovery, a winter season when the cold of detachment turns into warmth, and the soul is enriched with depth.
When spring returned to illuminate the Gambellara area, Eremotarso emerged from his hermitage, transformed into a new essence.
It carried with it a sweetness that only time and patience can give.
Its presence, silent but powerful, was like the lingering aftertaste of a fine wine, a tribute to the magic of Gambellara and its ancient traditions.

PROCESSING
The grapes are dried on traditional picai and set aside in the fruttaio until spring.
After that it is pressed and then fermented at low temperatures (fermentation can last more than 30 days).

2 years in barrels of first and second passage

DESCRIPTION
Appearance: A fascinating amber brings the glass to life, gold reflections capturing the essence of the sun.
Nose: Intensely enveloping, with aromas of dried fruit, chestnut honey and dehydrated apricot.
An exotic touch of mango and the sweet warmth of marron glacé intertwine with soothing notes of chamomile and spices, sealed by a bitter chocolate finish.
Mouth: A creamy and persistent embrace, in which pleasant savoriness accompanies delicate acidity.
A sublime balance that completes the taste journey, giving an unforgettable final note.

THE TRADITIONAL WITHERING
THE PICÁI
The Gambellara area is known for the production of fine dessert wines, the production of which represents an ancient and familiar practice.
Tradition dictates that during the harvest the best bunches of grapes, perfectly ripe and intact, are selected.
These bunches are then hooked to long ropes and in turn hung (in dialect “picái”) from the beams of the barns.
In this dark, cool and breezy space they rest throughout the winter, undergoing a slow withering process that allows their essence to be concentrated.
In late winter the dried berries are gently pressed (often with a hand press) to obtain a thick, sweet nectar, which is then vinified.
