The story behind the bottle
In the city of Venice lived a speziér, renowned for creating enveloping scents and unique remedies.
He was no ordinary apothecary; he possessed the secret to creating the perfect drink, a formula passed down from generation to generation.
He devoted his days to mixing herbs and rare spices, creating an elixir that could enchant the senses.
One night, while working in his workshop, magic struck.
A fluffy white hen appeared before him.
She was an enchanted creature, who with a curious glance, approached the perfect elixir, and tasted it.
The instant he drank, something magical happened.
From that day, the hen began to produce special eggs.
Each egg was beautifully inlaid and scented with the aromas of the store’s herbs and spices, capable of intoxicating all the senses.
News of these extraordinary eggs spread quickly, and rulers of distant lands longed to possess the magic hen.
So the spice maker hid it in a secret land surrounded by lush hills.
This land, baptized since then by the name of Chioccia, was an enchanted haven where the magic of eggs thrived.
Only a lucky few knew its name.
They continued to preserve the secret of the Chioccia, and the story became a legend that is still handed down from mouth to mouth.

HARVEST
Manual harvest in mid-September and light pre-crushing withering.

PROCESSING
Fermentation with maceration on the skins for 15 days.

REFINING
Maturation in steel on noble lees for 6 months with batonnage every two days.
Aged in tonneaux and cement for 18 months followed by 6 months in bottle.

DESCRIPTION
Appearance: A deep ruby paints the glass, a visual invitation to the deep richness of this Merlot Khorus and Cabernet Volos.
Nose: The aromatic bouquet sings a symphony of intense scents, an ode to nature.
Underbrush, ripe blueberry and blackberry intertwine with the sweetness of ripe plum.
A light note of dry vegetable joins scarlet rose, tobacco and pepper, while underlines of cocoa and black cherries in spirit add depth, with a sweet final note of licorice.
Mouthfeel: The mouth is the stage for intensity, with the wine being tannic and enveloping.
A delicate roundness embraces the palate, again revealing tobacco and spices.
The lingering sensation of warmth in the long aftertaste completes an experience that lingers.

CABERNET VOLOS

PIWI Cabernet Volos is a red grape variety obtained by crossing Cabernet Sauvignon with another variety known as 20-3.
This grape variety has a very rich and complex aroma, with intense fruit aromas reminiscent of the original Cabernet Sauvignon.
The overall quality of polyphenolic compounds is excellent.
This type of grape is ideal for producing wines that can be aged for a medium or prolonged period, due to their intensity and the high hue of color it imparts to the wine.
MERLOT KHORUS

The result of a cross between Merlot and another variety called 20-3, this varietal has the ability to store sugars well while maintaining moderate acidity in the must.
Its flavor profile has clear notes of red fruit.
The chemical composition, including the intensity, breadth and concentration of anthocyanins, along with the quality of the tannins, is remarkable.
This grape variety produces deep ruby-red, slightly purplish wines with good body and structure, making them suitable for medium to prolonged aging.
